Gagan Anand is an Indian chef best known as the owner and executive chef of the Indian restaurant ‘Gagan’ in Bangkok, Thailand.

When he was younger he was more interested in becoming a drummer than a chef. Before becoming a chef, he worked in some local rock bands. He made his first dish at the age of six. He made instant noodles and cried after making them because they did not look like the ones shown on the package.

Gagan started his training with the Taj Group after completing his diploma. After leaving the Taj Group, he started his own catering company in Kolkata but his company failed. After this he started providing home delivery services in Tollygunge area. In 2003, he started working in the cafeteria of a telecom company in Kolkata. In 2007, he started working in a restaurant named ‘Red’. This restaurant specialized in Indian cuisine. In November 2010, Gaggan opened his own restaurant named ‘Gaggan’. He was inspired by Rajesh Kewalramani who met Gagan in Spain in 2009 and liked his cooking style.

His restaurant ‘Gaggan’ was listed in the ’50 Best Restaurants in the World’. Gaggan was also the first Indian to work with Ferran Adria’s research team at ElBulli. In 2014, ‘Gaggan’ was ranked 17th at the global level. It became the best restaurant in Thailand in 2015, 2016 and 2017. It was included in the list of Asia’s 50 Best Restaurants and won the award.

It was ranked 10th, 23rd, 7th and 4th in the list of the World’s 50 Best Restaurants in 2015, 2016, 2017 and 2019. It is the only Indian restaurant to feature in the top 50. In 2016, Gaggan became part of it. Episode 6, Season 2 of ‘Chef’s Table’ which aired on Netflix. On July 23, 2019, he left the restaurant due to a dispute with his partner. After this he opened his restaurant named ‘Gagan Anand’ in Bangkok on November 1, 2019. In 2021 his restaurant became number 5 in ‘Asia’s 50 Best Restaurants’. In 2020, Gagan announced that he planned to close the restaurant and open a restaurant in Japan that would seat only 10 people and be open on weekends. He has opened two other restaurants – Meatlicious and Suhring.

  • Gaggan always wanted to be a musician but he chose cooking instead. Explaining the reason for this in an interview, he said,

    I always wanted to be a musician. I dreamed of becoming a professional drummer in a band, but one day, as a teenager, I realized that my financial situation would never be good enough to pursue my dream as a musician, so I Next I moved on to the thing I knew best, cooking. I was admitted to IHMCT Kovalam in 1997, which was almost the same distance from home, and I never looked back. I’ve never seen one without a view of the kitchen along the horizon.

  • In an interview, Gaggan told about the fight he had with his partners. He said,

    While I was on family vacation after negotiations, my former partners tried to buy my team from me by bribing them with bonuses and tempting promises. One of the most powerful moments of my life was when my team of 65 rebels rejected the promise of money and chose love and loyalty instead. “He challenged greed and that gave us the strength to follow our passion.”

  • Sharing his experience of his trip to Bangkok he said,

    When I arrived in Bangkok, I noticed there was no great food scene, and the first thing I wanted to do was eat. I always wanted to do something different. I worked with and followed chefs in Europe who were elevating the world of fine dining, starting with Ferran Adria, he showed me that the whole world was into this innovative, playful food culture. My mom always used to say “don’t mess with your food” but now we want to do just that. it is forbidden. Asia was opening its eyes to a new dining world and it was by luck that we found ourselves in the right place at the right time, so we took advantage of the opportunity.

  • According to Gagan, he was in depression during the lockdown. To feel better, he started working out.
  • Gagan entered the international arena to start his career. Explaining the reason for not opening restaurants in India, he said,

    The problem in India is that we think the customer is always right. The chef will make changes to his dishes as per the guest’s wishes. We are very pampered. My cuisine is not meant to be pampered, it is meant to be understood and enjoyed. We cook whatever Gaggan wants to cook. Therefore, before coming back to India, I had to gain international recognition. If I had started here as just anyone, I don’t think it would have worked out.

  • On Valentine’s Day, Gaggan posted about his toxic relationship with his first wife and wrote,

    The real reason I left India was that no one would believe it, but today I am not afraid to say that I ran away from my first wife.. She was my first love, we were together since 1998.. I After 7 years ran away from him because of toxicity, I had no love left, although it was fun enough that I gave him a second chance, we lived together in Thailand in 2007-2008. She was the most abusive person I met.. Mentally ill or maybe I always thought I wasn’t good enough.. We separated legally and I forgave her but the scars still remain. .and this is life many times relationships happened , fell in love and things changed today love is ok i have love and happiness because i believe in love and rebel in life .. accepted in a toxic relationship and Don’t accept a loveless life, being free and happy is the most important thing.
