Gibson began his hockey career at Notre Dame College. He began his career with the Notre Dame Hounds (Midget AAA), where he won the Telus Cup national title in 2009. Gibson was selected in the first round of the 2009 CHL Import Draft by the Chicoutimi Saguenéens of the Quebec Major Junior Hockey League. Before the 2011 NHL Draft, he was considered the best goaltender in the QMJHL.
Gibson was the first goaltender selected in the 2011 NHL Draft from the Canadian Hockey League. Gibson was traded by the Maple Leafs to the New York Islanders on September 17, 2015, along with four other prospects, in exchange for Michael Grabner. He made his NHL debut for the Islanders against the Washington Capitals. Gibson was re-signed by the Islanders on August 15, 2016 to a one-year, $660,000, two-way contract. At age 17, Gibson won a bronze medal at the IIHF World U18 Championship in Belarus in 2010. He was selected to represent Finland at the 2012 World Junior Championship in Calgary and Edmonton, Alberta.
