Amit started his professional boxing career in 2017 with the National Boxing Championship. He won a gold medal in the game. However, he rose to fame a few months later after winning a bronze medal at the 2017 Asian Boxing Championships (light flyweight category) in Tashkent.
The bronze medal at the championships qualified him for the 2017 AIBA World Boxing Championships, where he was defeated by Hasanboy Dusmatov (Uzbekistan) in the quarter-finals. He made a strong comeback after the defeat and won a silver medal at the 2018 Commonwealth Games. The same year, Panghal participated in the Asian Games and won the gold medal by defeating Rio Olympic medalist Dusmatov (the same opponent who had defeated him at the World Championships a year earlier).
In February 2018, he won the gold medal at the Strandja Cup in Sofia.
Before the start of 2019, he had to change his weight category from 49 to 52 kg as the former category was discontinued from the Olympics. Despite the change in category, Amit won the gold medal at the Asian Boxing Championships in Bangkok. On 21 September 2019, Panghal became the first Indian boxer to win a silver medal at the World Boxing Championships.
In 2020, he qualified for the 2020 Tokyo Olympics by defeating Carlo Palam of the Philippines in the 52 kg quarterfinals. In December 2020, Amit won the gold medal in the Boxing World Cup in Germany.
